Cheesy Corn Chowder
This one is awesome with some good cornbread (I like cornbread muffins with fresh jalapeno in them)
Cheesy Corn Chowder 3 large potatoes, peeled and diced 4 C boiling water 2 bay leaves ½ t sage 1 t cumin salt and pepper to taste 6 T butter or margarine 2 onions, chopped 6 T whole wheat flour 2 ½ C milk, buttermilk or cream ½ t ground nutmeg 1 lb. fresh or frozen corn Cook potato, bay, sage, cumin, salt, and pepper in water until barely tender, about 15 to 20 minutes. Sauté onion in butter until tender; blend in flour. Off heat, gradually add milk, stirring constantly. Stir milk mixture and corn into potatoes and water. Add nutmeg and simmer gently until the chowder is thickened (about 10 minutes). Add cheese and stir until it melts. Optional; Add a couple cups cooked, diced chicken breast before adding the cheese. |

Oh man....this sounds great. I just had corn chowder at lunch today too. I will be trying this recipe.

Yeah, this is tasty. I made it up with about a third of a block of cheddar, sauteed/chopped chicken breast, no onion, and a little bit of garlic. Probably about $7, and plenty of leftovers.

Jeff, in your opinion, what cheese other than cheddar, would compliment the chowder?
