Aged Cheddar with English Ale
I picked up a couple of different wedges of cheddar last weekend. The first was a sharp cheddar from Ireland which was very nice. The label on the second said it was from England and made with English Ale. It was a little sharper than the Irish cheddar with a sharper bite.
We enjoyed them first with some ground mustard, thin sliced red onion and plain saltine crackers. The beer of choice that day was Abita Springs Andygator. Everything was excellent. Then last night for dinner, we decided to just have sandwiches. I started to do a hot pastrami with Swiss but remembered the cheddar. I made a grilled ham and cheese useing the leftover English Ale cheddar with thin sliced deli ham and red onion on sourdough. WOW! |

I love 4 year old aged white cheddar, even with those little crystal bits that i think are chunks of cholestorol lol

I love aged english cheddar. Its nothing like the cheddar we get here. Crumbly with small veins running through it. The flavor is probably my favorite out of all the cheeses I've ever had.
