Wife and I really enjoyed Couples Negril as well. Their all inclusive really does include everything (scuba, snorkeling, cat cruise, etc), we went to Sandals Mo Bay on our honeymoon. We enjoyed it then but have heard it has gone downhill. We are going to Riu Palace Tropical Bay in Negril at the end of the month for a friends wedding. We have seen the property before since it is right next door to Couples. I think I will like couples better.
We have also done a few AIs in Mexico. The Iberostars in Riviera Maya are nice. We enjoyed them. Like everyone else says, check Tripadvisor reviews of any places you are considering. Take the negatives with a grain of salt. People complain about the littlest things on there. |

If you where at all considering any non-all inclusive I can recomend a beautiful private resort in St. Lucia that me and my wife stayed in for our honeymoon.

Check out the Moon Palace in the Mayan Riviera in Mexico. Of course, I was on my parents' dime when I went there about 8 years ago, so I can't say whether it was reasonable or not.
